Have you ever tried making broth with Parmesan rind? Parmesan is one of our national heritages, unfortunately threatened by terrible foreign imitations and overbearing duties. Nothing is wasted on this cheese: grated, chopped, in broth or toasted on the fire is a real goodness! We Italians know its value and to all the people who live overseas we say to be wary of imitations, to buy only Italian products, to taste it if they have never done it before and to say no with us to boycott these culinary excellences. Tonight we will taste this mix of delights to reinforce ourselves against the cold and immerse ourselves in the middle of autumn ... if I can I also light the fireplace 😁
